A bit the same story as our Blueberry lambic. We had a full pallet of surplus delicious Italian green grapes. I like to snack grapes like anyone, but this was perhaps a bit much. Add it to lambic it is. The result is, permit some bragging, quite the happy marriage. | |||
This fruit lambic has about 400 grams of green grapes per liter of lambic. After fermenting for four months, there is a second fermentation in the bottle, producing those lovely bubbles. The acidity is a bit less outspoken than most lambics because of the extra sugar in the grapes, but of course unmistakably still lambic.
